Name and HistoryEmbryonic pepsin is an aspartic endopeptidase secreted by epithelial cells in the proventriculus of vertebrate embryos (Hayashi et al., 1988) which has been partially characterised in the chicken. The specific expression of the gene is controlled by DNA methylation, and the gene is unmethylated only in the proventiculus (Fukuda et al., 1994). The peptidase has not been biochemically characterised and its role in development of the embryo stomach, if any, is unknown.
